Viennese Chocolate Sables
recipe
260 grams all purpose flour
30 grams cocoa power
250 grams unsalted butter at room temperature(the butter must be very soft)
100 grams icing
Pinch of salt
3 tbsp lightly beaten egg white
position the racks to divide the oven into thirds and preheat the oven to 350 f
line to baking sheet with parchment paper and set aside
fit a pastry bag with a medium sized open star tip
whisk together the flour and cocoa
beat butter with a whisk until it is light and creamy
whisk in the sugar and salt
then stir in the egg white
add dry ingredients and blend only until it is incorporated don't over mix
spoon the dough into pastry bag pipe the dough in to W shaped cookies
bake the cookie for 10-12 minutes or until they are set but neither brown
before serving you can dust the cookies with confectioners' sugar
make about 65 cookie
